Geir, it is Beef. It is Brisket. I did not make it, i bought it from Harry Hansen's Meat Service in Raymond Wisconsin

Tony, it's Brisket Bacon, you can eet it right out of the package or grill it fry it butt don't over do it, cuz you'll dry it out.

I might hafta buy a package for everyone here and send them out to ya'll

It's probably going to be hard for me to get brisket bacon. I can't even get chuck eyes. :(

I've "driven by" Hansen's meat market on Google Earth. Me oh My, you really live in a flat area..
I'm way ahead of you. I'm actually curing four pounds right now. Not brisket, I admit, but beef rind. Will smoke and post during the upcoming weekend. :)

compared to our southern neighbor state, Illinois, the FLATLANDERS, we are considered quite hilly. Geir, there are no mountains in Wisconsin.:rolleyes:
 
...and here I thought we had it all with Canadian bacon. Great cook Jim. I'm thinking they must be cutting the brisket with the grain otherwise it would never stay together.
