I'm a newbie on this site and I saw this and this looks phenomenal!!
Can I please ask what is in the bowl that's green? Is that sofrito, or is that pico de gallo? (i'm married to a Cuban therefore i am always looking for great dishes that are authentic that i can make and this looks incredible!) I'd love for you to share that recipe as well!
I can't wait to make this for him because he loves fried fish and I think this would be something we would enjoy.

It's just regular salsa verde. Here's the recipe.
Here is what Maribel said..
5 jalapeños
5 serrenos peppers
3 tomatillos
4 garlic cloves
This items need to roasted on the grill until they are nice and charred.
Put in a blender with with a 1/4 onion chopped. 1/4 bunch of cilantro. Add about 1 tbs of garlic salt and enjoy.

Absolutely! I have made a Butt (pernil) twice on the WSM and it comes out very delicious, the only drawback is that it doesn't have the crispy skin but i am working on it.I finally figured out how to use this photobucket thing, lol
