To mr. & mrs. Tony/Maribel:

I'm a newbie on this site and I saw this and this looks phenomenal!!

Can I please ask what is in the bowl that's green? Is that sofrito, or is that pico de gallo? (i'm married to a Cuban therefore i am always looking for great dishes that are authentic that i can make and this looks incredible!) I'd love for you to share that recipe as well!

I can't wait to make this for him because he loves fried fish and I think this would be something we would enjoy.

It's just regular salsa verde. Here's the recipe.
Here is what Maribel said..
5 jalapeños
5 serrenos peppers
3 tomatillos
4 garlic cloves
This items need to roasted on the grill until they are nice and charred.
Put in a blender with with a 1/4 onion chopped. 1/4 bunch of cilantro. Add about 1 tbs of garlic salt and enjoy.

Josie maybe you can cook some Cuban dishes for us on the weber soon??

Absolutely! I have made a Butt (pernil) twice on the WSM and it comes out very delicious, the only drawback is that it doesn't have the crispy skin but i am working on it. :) I finally figured out how to use this photobucket thing, lol

You have to do the Pernil for us... And post it.
 
Looks great, love how it's all done on the Weber, nice trick with the charcoal trays nested in the middle.
Fish looks awesome.

Your cooking always looks phenomenal. Fish tacos & carne asada....now that's what I call an exceptional surf and turf. You and Tony make up quite the BBQ/grilling dynamic duo...keep those photos coming!:D

That is one awesome plate of grilled grub. You and Tony are fast becoming stars of this forum. Keep up your spectacular cooks. One thing I'd like to see is grilled authentic enchiladas. I remember my Mom making them when we lived in El Paso many years ago and, even at a very young age, I liked them.

Great looking cook Maribel! I would say i can show my wife this and let her do the grilling from now on, but then i would have to give it up (and i don't want to do that). great looking cook
