We've been having thunderstorms, rain, wind, you know all the perfect weather for smoking with a Weber!I had a bone in turkey breast in the freezer and decided I needed to make room for other things.

Total down pour during the entire smoke so I didn't get any action shots. Fired up the Mini with KBB, Kiawe and set the pit temp to 350°. Simple prep rubbed with salt, pepper, garlic. Air dried in the fridge overnight.

Placed the bird on a rack over a disposable foil pan and into the smoker. Took 2.5 hours to hit an IT of 165°. Pulled foiled and let rest for 45 minutes.

Wife made a baked cauliflower mash. I made mashed garlic taters and pan gravy from the drippings.

With all your custom builds, I'm surprised you haven't build yourself some crazy BBQ shelter for all weather conditions. ;)

Nice cook!

Looks gorgeous Case, as always. I can eat turkey any time of the year. Actually have a 15 pounder in the freezer. Sure glad to see Oregon getting some rain.

That looks real good Case, but how can I tell that it's really turkey without the pop up timer? :-)

Looks great Case, Barb and I just did a bone in breast and I still have two turkeys in the freezer. We love turkey anytime of the year.

That is one outstanding turkey cook Case. Those pics were awesome. Can you explain the cauliflower mash for us it sounds interesting.

Barb your missing out! Cauliflower mash taste great. Boil and mash like what you would do with potatos. It's the exact texture as mash potato, but lighter. Quicker to cook. I mash cauliflower all the time for sheppards pie. http://www.todaysparent.com/recipe/stove-top/shepherds-pie-with-cauliflower-mash-recipe/

Plan to make sheppards pie and smoke the cauliflower one day.

Yum, that looks great Case. And you also have mashed taters with gravy, a must have with turkey in my book. It's been feeling like Thanksgiving type weather here also the past few days but looks like it's going to warm up real soon.

Thank you!!

Okay so here is the scoop on the cauliflower mash. First when ever I can I set up my bamboo steamers over something that is already boiling. In this case it was the taters I was boiling for mashed taters. The cauliflower takes a bit longer to cook than the taters so I saved the water when I strained the taters and put it back on the stove to finish the cauliflower. Back to whats in this mash. Steamed cauliflower, one block of tofu (I know I know! that's what I get having a wife that was a vegetarian!) shredded cheese, whatever you like. We had Tillamook Extra sharp white cheddar for this. Seasoned with salt, pepper (you can add nutmeg, all spice, five spice, cummin, chili powder, flakes, etc). Mash, that all together place in a casserole dish top with parmesan or other cheese and bread crumbs. Bake in a 350° oven until heated through and golden brown on top. It's pretty simple and you can add anything to it to change it up.
