It IS nice to try something new from time to time though.

Larry, take your camera ... Not your cell phone camera either! I could go for some crab legs..

Well, got up at 3 to pee .. WSM was hummin' along at 220º and the butts were at 157º. Got back up at 4 and still there, so I bumped the WSM up to 235º to help ease them through the plateau. At 6, they were up to 159º so I took her up to 250º to bring 'em home. They're at 174º now. Smells fantastic out there, with a cup of coffee in the still air....

Had to refuel at about 10:15, after 16 hours, and moved the therm to check for doneness .. Not there yet (still a bit tough inserting). Been sitting at 183º for a while now...WSM running solid at 250º. Will need several more hours. Got this pic while I was in there..

i just got 2 whole racks of spares. i'm going to trim them up st louis style after dinner and put the salt and peppered trimmings on the kettle indirect with some hickory for a big pot of green beans tomorrow. spares,green beans and grilled corn on the cob tomorrow

didn't get to see much of the game, but from what I saw and the post game, it sounds like another long season.

. No bbq, but we knocked out 3# peameal bacon, 3# spar's english bangers, 3 casseroles of egg strata, hashbrowns, belgian waffles, and fruit salad. I was helping out my wife, and it was some serious grub. Don't worry boys, I got a good nap in after brunch, during the present openings.

I live a few hunded miles north of Helsinki, but I would definately have gone to see the game had I have been there. A few years ago I saw the Canadian Olympic team play the local team up here, and that was a great game. I was with an Irish friend, and I think we were the only ones supporting the Canadians - When they scored the first goal we wondered if it was really a goal because we were the only ones cheering.

just got my corn soaking in a pot of sugar water and got the WSM ready for the ribs to go on at 11am. i didn't feel like going to walmart for RO lump so got a bag of stubbs from lowes to try out. i used it with some hickory indirect on the kettle last night with my rib trimmings and it held 300 for 2.5 hours with no problems. the S&P tips were mighty tasty too. i saved one small piece to eat and the rest got food savered for beans and such.
 
Little late to the party here however the wsm was in action this weekend. I made some ABTS and a smoked turkey. Kind of gearing up for the holidays and trying some new stuff out.

The turkey I did using this method off the site. http://www.virtualweberbullet.com/turkey6.html I did tweak it a bit. I added 2 tablespoons dried thyme, 2 tablespoons dried rosemary, 1 tablespoon dried sage, and 1 teaspoon coarsely ground black pepper. Oh and I did have a few Becks in me so the bird got one of those to!

It took just about three hours to cook it and then I rested it in a cooler for a couple hours breast side down. Cooked at 325-350*. Afterwards I tossed some ABT's on and worked on my sides.

Basic sides were home made gravy, stuffing and a green bean casserole. I did not get any pictures of the sides but here are a couple pic's of my cook.
