Tried a recipe from jamie purviance.

And after 30mins, it was still very raw. I cut it up.

Meh! Still pretty raw. It was a bad idea to put it in a pan. There seemed to be little airflow, little browning... Not that good. Gonna redo it another time. Let's see what happens when I reheat/cook it through.
 
It's not a bad idea to put it in a pan. I think the problem is that you didn't cover it for the 1st part of the cook and didn't cook it long enough.

Roasting a whole head of cauliflower is one of our favorite side dishes and it's easier to roast it in the oven. Use a cast iron skillet, (or any oven proof pan). Preheat the oven to 375.. trim the core from the bottom, drizzle and spread virgin olive oil over with your hands to ensure that the entire surface is covered. Cover tightly with foil and roast for ~ 30 minutes then uncover and continue cooking until it's golden brown, (about an hour). It's done when a paring knife slides in easily. It's our favorite way of eating cauliflower.

Note: not my recipe...I found it on the internet a while back and it's our go-to. I guess if you want smoke flavor, you can finish it on the grill with some wood chips.

I've seen it on menus described as grilled Cauliflower Steaks. I might be green, but I'm not a cabbage. Take some other bonehead's money.

Smoked cauliflower is pretty good. I'll cut a head up into florets, and I've found the trick is to parcook (by steaming,) then throwing those on a sheet pan into the smoker for 30 minutes to an hour. A sauce with sour cream and either mayo or Greek yogurt with a good curry powder goes well.
 
I rub the cauliflower with olive oil and then sprinkle it with garlic salt and course black pepper, then
steam it just to soften it up a bit. After that I bake/bbq it....covered. When its fork tender toss the foil and cover it with
pepper jack cheese until melted..... Yum.
