Well aged rib tips

While looking for something else in the freezer this morning, I found a bag of frozen rib trimmings dated 7/28/07. So I thought, what the heck, I'll cook them. They're on now, over lump with a couple of chunks of hickory. I'm hoping for the best, but if they're inedible I do have home-grown tomatoes and the fixin's for BLT's to fall back on.

Sounds pretty good. I would rather be at home with my smoker too. I don't know why these dang hospitals expect someone to be here 24/7

I can't decide between a high temp brisket, or some spares tomorrow.
 
Maybe I should have called this thread "Ribs in the Rain". Thanks to a thunderstorm that quickly rolled in, the WSM is cooking away in a deluge. I just had time to put a plastic bag over my Polder thermometer. Maybe I should start frying some bacon, I may be eating BLTs after all.

Well? How did the rib trimmings turn out? Do you think leaving them in the freezer for so long hurt the meat?
 
They turned out pretty well, all things considered. I used Wolfe Rub on the meat, then put a coating of Sweet Baby Ray's sauce on for the last 20 minutes of cooking. Some of the pieces were a lot smaller/thinner than others, so they got a little bit overcooked, but I'm eating them anyway. The meat didn't seem to have suffered from a year in the freezer. I was surprised to find almost no water in the bottom of the WSM when I took it apart to clean it out - I guess the seal between the lid and body (that layer that builds up after a few uses) keeps water out as well as it keeps smoke in.

Good to hear that the meat didn't suffer after a year in the freezer.

Man, I feel like I'm looking at a picture of my house. Kettle, WSM on a drip pan, even the metal garbage can. I guess if we all weren't a little alike, we wouldn't have ended up on TVWBB.

I need to pick up a mini metal trash can like that. I've been using the empty briquette bags for ash collection, up till now. When they get 3/4 full, I toss them.

I've got the same drip pan though, gives a measure of security. I don't want oil stains on my deck.
