Weekend Rib Eyes

I'd picked up a couple of Prime Rib Eyes from Costco a couple of days ago and decided to have them tonight for my first cook on my 26 inch OTG. Just rested them at room temperature and salt and pepper only. To go along with the steak, I did Yukon Gold Potatoes with Mushrooms, and lastly did some Grilled Beets with Arugula, Goat Cheese and Pistachios. Everything came out great. If you haven't tried Costco's Prime beef, you should. It's pricy but worth in.

Getting the potatoes and mushrooms oiled and seasoned.



The beets are scrubbed, trimmed and ready to go.



Steaks, seasoned with salt and pepper only, at room temp, ready for grill.



Getting Smokey fired up.



Beets are on for about an hour.



Getting the 26er fired up for very first time.



Potatoes and mushrooms on over direct medium heat.



Steaks seared over direct high, finished on indirect.



Tossed the beets and arugula, along with the goat cheese and pistachios.



Plated up and ready to go.
