I asked my wife, Bev what she wanted for dinner tonight. She wanted Italian and wanted me to
fix Chicken Spiedini. Breast tenderloins were marinated for a couple of hours in Italian dressing.
Tenderloins were dipped in a combination of olive oil and unsalted butter. They were then dipped
in a panko, lemon pepper, and Parmesan cheese mix. They were then threaded onto skewers.
I used the OTS tonight with Stubbs charcoal. I used a couple of firebricks to hold the skewers so
I could turn them without losing too much breading mx.
Spiedini is done!
Plated, or I should say bowled with some tri-colored Rotini and spaghetti sauce. We added a
Cesar salad to complete our dinner.
Delicious, quick and very filling dinner!
