Weird. Flats are usually a little leaner. Sad that it's rubbery. Or are you saying it "tastes" like rubber?

It feels rubbery, lots of fat... but that should have rendered? I'm not sure. It also tastes more like corned beef than pastrami, but we'll see. After such a huge dinner I'm not hungry enough to eat a pastrami sandwich too!
