It'll be great for the chops and veggies, I have no idea about the tofu. As far as the beer can chicken goes, that might be tough due to the low ceiling. Spatchcocked chicken would be ideal on this BBQ
I don't use the stock charcoal grate (which is the same grate as a normal 22" kettle) I use an old grate out of my Smokey Joe. It sits a little lower in the BBQ, which probably increase the distance between the cooking grate and charcoal grate about an inch or a tad more. I'm not sure I'll keep it. There's nothing you can do on JJP that you can't do on a regular kettle
