One small rack of St. Louis style ribs was marinated overnight in a mixture of Chinese Barbecue
Char Siu seasoning and Chinese Five Spice. I wanted ribs and my wife wanted Chinese, so thus
the compromise, Chinese ribs. These are very thin ribs which could explain why they were a
2 pack for $6.00.
Put onto the Performer using RO lump and no wood.
After 2 hours they were wrapped in foil with a mixture of tiger sauce, honey and blue bottle
margarine. I wasn't sure what to use, so I used what I normally use with ribs!
Put back onto the Performer.
Ribs are done! Actually a little more done than I wanted them as some of the bones on the end
and where the ribs were really thin started to fall off. I got to talking with my wife and honestly
forgot to check them sooner.
Plated with fried Chinese rice.
This dinner was actually really delicious. I am not too hot on oriental food (long story), but will
do this one again. The ribs weren’t all fall off the bone, just the thin areas, but to me they were
still more done than I normally do. But the main thing is my wife likes them this way and ya gotta
keep them happy!
