Turning Smoker Into Charcoal Grill

I have been a life long gas grill guy. Just started using charcoal with the weber smoker so I can do some real BBQing. I have been hesitant to try charcoal grilling due to time needed to setup and clean up. After tonight, I am a convert to charcoal grilling....best steak I had!

I converted my 18' WSM into a charcoal grill for my ribeye tonight. Took a brick from the garden and wrapped in heavy duty aluminum foil. I used this to cut my charcoal ring in half and to stack my kingsford briskets up high. High heat exposure closer to the meat for a great sear. I used a single grill mate grate from my gas grill.

Some simple sides...beans from a can.....rice cooked in water pot with a spoon of butter and fresh rosemary, then drain and sprinkled with fresh peppercorn and basil from the garden

Great looking steak!! And welcome to charcoal grillin! Always have and always will be a charcoal man. Oh btw, I think I have those same plates.

I would love to get a kettle or a performer but I dont think I have space on my small deck. It's already crowded with the recent addition of the 18' WSM and my webber Spirit 310. My deck is about 150 sq ft attached to my townhouse. Space is really tight.

In my prior experiences with steaks on a gas grill, I would have never been able to get that high of a heat for a good searing. Charcoal heat brings the game to a different level....feels like I can 700-800 degrees easily.
 
What a great idea. I was about ready to pull the trigger on a OTG, but when I saw this I went out and took three grillgrates off my gas bbq and they fit perfect.

I just need enough space to do couple steaks or burgers for me and wife.

Thanks for the post. Not having to now get the OTG it kind of makes my grill grates free. (Men can rationalize the price of their toys)
 
Great set up, I was put off (never occured to me actually) doing it your way as there is just Dad and me at home and it seemed a bit too much (fuel wise) to do it this way.
