Turkey Leftovers

Cooked a turkey over the weekend and used the leftovers to make Tortilla soup and a pot pie

The soup was done on the stove. Simmered the bones to make a stock, added can of tomatoes, onion, jalapeno, cilantro, taco seasoning, roasted corn and some crushed up tortilla chips.


For the pot pie made a gravy, leftover turkey breast meat and a package of frozen vegetables. Rolled out a frozen pied crust that I butchered on the bottom of a CI skillet, added the mixture and added another pie crust on top.




Cooked on the grill for around 30 minutes.


 
Excellent job on both John, Could go for a huge bowl of tortilla soup on a cold rainy nite like were having followed by a plate of that pot-pie
 
Oh wow John. That pie looks fantastic and that soup tugs at my heart (and my stomach). Way to go. Still working on turkey leftovers here too. Had two killer turkey sandwiches today. We had to freeze a bunch. Great job.
 
Outstanding John. I did a turkey (breast) last weekend and we've got pot pie on the menu tonight. Thanks for the CI skillet on the Weber idea.
 
Those two cooks look great John. Barb and I do the same with the PP except we put them in ramekins and freeze them after cooking them, makes for a quick tasty microwave meal if your in a hurry or don't want to cook.
Never thought of the turkey for tortilla soup will have to give that a try.
 
I like useing the CI for the tpp, will have to give it a try. Love soup so will be trying that with turkey for sure.
