Turkey breast

Did my first bone in turkey breast yesterday. It was probably the most moist turkey I have ever had. Injected it with around a cup of homemade chicken stock with a stick of butter melted in. Seasoned with salt and pepper and smoked with a couple chunks of pecan wood. My wife made some great stuffing and mashed potatoes.

I do several of these in the fall for holiday festivities. They always turn out great. I usually use Butterball so no injection needed on my part. I rub it inside and out with a homemade rub made with sage, onion, garlic, thyme.
Who would have thought the law allows you to cook turkey in the spring.
