Dwain did you brine these breasts at all? I think I could dry those things out fairly easily. Hope to try one around thanksgiving.
Thanks for the info. I'm gonna have to try one soon, they look great.I normally brine poultry and even some pork. However, these were "enhanced" with a 15% solution before I bought them. I did not want to get into a "too salty" situation so I did not brine them. In the end this was the right choice. They were very moist and tender. ...not dry at all.
