Since I have the week off & I know that I won't be cooking on the 4th, brisket it is.

Building a bed of coals in the offset at the crack of dawn.

+3 Hours in & its time to spritz.

Look's like it time to wrap with some wagyu tallow.

+9 Hours on the offset, 2.5 hour rest in the cooler, very moist. Sorry no plated pictures, sometimes you just eat standing up hovered around the cutting board.
