Tu-gers? Bur-nas? Nah: tuna burgers

I'm slowly whittling away of our stash of tuna from the freezer. I used this recipe and ABTs for, well, just 'cause. Here they are, wrapped and dusted



the tuna burgers resting. I used our old, hand cranked Universal #2 meat grinder, I forgot to take a picture...:(

The recipe has a fresh pickle component, that's what the cukes are on top. Not as flavorful as I would have liked - tuna was good, but there is also a Serrano pepper and garlic and fish sauce in the burgers and it was subtle at best. I can (will) ratchet it up next time. Thanks for stopping by...

My eyes can't really tell but it almost looks like tuna...
 
Man, those burgers are nice! I've had tuna burgers at cafe's and I love them. And I'm gonna have to try stuffing bits of tuna in my next batch of ABT's.
 
Nice looking tuna burgers!!! How was the texture of the tuna thru a meat grinder? Every time I see a fish recipe (I'm looking at Salmon recipes not tuna) that requires ground fish they recommend running it thru a food processor. I was thinking using my meat grinder but was wondering if the grinder would make the fish too mushy.

I wish I had pics from the grinding step - I went that route thinking the food processor would make the mush. The grinder worked like a charm: consistent, even sized pieces. The tuna had not defrosted completely; one recipe I looked at had me cubing the meat and than almost freezing it. Another tip I found on the inter-web was to stick the grinder parts in the freezer for 10 - 20 minutes before grinding. I did use the coarse blade... I think salmon burgers would be the bomb outta this rig.
