Even though it was cold here last night, I had some cravings for a good burger.**I always seem to make burgers much too big for the bun and my stomach, so I tried to do more of a fast food style burger.**I love Five Guys, so I kinda used them as model.
Anyway, I ground up some chuck.**Put the metal grinder in the freezer ahead of time, cut some chuck into strips, par-froze the meat, ground while it was as cold as possible.**It was like meat pebbles, which is perfect!**Sorry, no pics of this, hands were too dirty.
Rolled out the burgers into balls.**My plan was to smash them onto the grill grates to flatten when I cooked them. Overall it worked out well! I overcooked the patties a bit trying to get a good crust on them. Also, they were a bit dry, was probably a mixture of being too lean and overcooked. The meat was tender, almost TOO tender... a few of the burgers crumbled slightly, but if I used cheese would've held together better.
