Tri Tip Cooked Like a Brisket.

Back in July Dave /G posted a you tube video of Harry Soo cooking a tri tip like a brisket.

I had four dog food special TTs in the freezer and just for a change decided to try it cooked like a brisket.
The night before I seasoned the TT with Weber’s Original Dry Rub
Set up the mini with a minion start with KBB.
Used cherry and olive for the smoke.
Ran the mini at 230-235 until the TT read 160 about 3 hours then foiled with BBQ sauce and apple juice.
Bumped up the mini to 275 and pulled at 205 about two hours after foiling.
Let it rest for 35 minutes.
Barb made the sides a garlic pasta and some steamed broccoli and cauliflower.
The TT was very moist and tender and somewhat like brisket. If I was to do it again I would SPOG it and just use beef broth when foiling.
It certainly wasn’t bad but both Barb and I agreed Tri Tip is best cooked HH and med rare.

Well... it certainly looks like a delicious dinner. Will accept your opinion of L&S tri-tip. Kinda suspected as much. Would a BBQ sauce improve the sliced meat?

Good question Robert, Barb and I were talking about that today. It was really close and needed some kind of kick as the meat was a little flat in taste. We have some left over I may try a little # 5 on it which I'm making for our ribs on Labor Day.
 
rich, Your "trisket" looks like it came out perfect. When you wrap it add some onion slices too.
I like to fix tri-tips that way. We use all different rubs & seasonings.
