Trader Joe's Pizza Dough

Someone on here, recently (I can't find the thread, now) suggested that Trader Joe's pizza dough was good. My wife and I happened to be at Trader Joe's a few days ago and I picked up a couple of bags (pre-made in the refrigerator section). Each bag makes on 12" pizza crust and the cost is minimal.

At any rate, we had my brother and his wife over for a "make it yourself pizza party". My wife chopped all of the veggies (sweet peppers, onions, banana peppers, etc) and use store bought shredded pizza cheese mix as well as shredded mozzarella). We also had lots of sliced peperoni (of course). Everyone took their side of the crust and used canned pizza sauce (Prego brand).

At any rate, I used my "standard" pizza set up on the Performer (two thin fire bricks on the sides on top of the food grate with a pizza stone on top). I put a full lit full size Weber chimney on then topped with a full lit small Weber chimney on top. I gave it about thirty minutes to heat up then put the first pizza on. It took ten minutes or so, then did the second one (I could have done a half dozen before losing heat according to my laser thermometer).

At any rate, the Trader Joe's pizza dough was a WINNER! It was least as good as our best home made dough and that is sayin' something. The dough was crisp on the bottom with nice bubbling above and a very good chew. All in all, excellent all round and it took a fraction of the time and effort to make. I can recommend this without reservation.

I would suggest that you let the dough come up to room temperature for 45 minutes or so to give it time to warm and rise a bit before you roll it out. Make no mistake this is VERY good dough. We'll be doing these in the future, for sure!

That's what I've been using. For a whopping $1.19 per bag.... it's a no-brainer. Also, I live a stone's throw away from TJs. Myself.... I let it sit for at least an hour one half to get it to room temp. I don't roll it. I stretch/hang it between my my hands & arms (give yourself a light dusting with flour first). Gotta get it relaxed!

Barb makes her own dough which we really like. My daughter works for TJs and told us it's very popular, but way to much salt for me. Glad it worked out for you though.
 
I used TJ's dough too. I was really having a bad time making my dough and gave up. TJ's dough is the bomb, let it sit out a couple hours and bingo

Since then, I've been making Barb's pizza dough and have never had a miss. Her dough is easy, it's fantastic and you can cook it within two hour (even less) from making it
 
TJ's dough is a great option. I like to make my own dough but normally don't have enough time! We use it regularly at my house!

Sorry for the late reply - somehow I missed your question.

My old Pizza stone (we had it at least 25 years) finally broke on the grill. I wanted a thicker one to better withstand the thermal shock on the grill. At any rate, I did some research on the net and finally called Cucina Pro and got their round stone. They said I shouldn't have ANY problem with this on the grill (it's made from the same material that they use to line wood fired ovens). I have use two thin fire bricks (they come in two thicknesses - standard and thin). You can get the fire bricks from a building supply or fireplace builder. I have paid from $1.75 each to $3.75 each. I found the least expensive from a wholesale builders supply of brick, stone, and fire brick materials.

another +1 on TJ dough.

I should do homemade but for $1 and change its unbeatable. Let it come to room temp and you're good to go.
 
TJ pizza dough is great!! I usually put it straight on the grates and it works just fine. I brush it with some olive oil, flip it once, put tomato sauce and toppings until the cheese melts. I'm going to try using a stone and let the dough rest for an hour. Great tips!!!
 
When using pizza stones on a grill, I would heartily recommend using a pizza pan (one of those larger spatulas), and even a sprinkle of corn meal at the bottom. Makes placing/removing the pizza dough much easier.
