Top Sirloin on the old red SS Performer

I had a hunk of top sirloin I didn't know what to do with, so I decided to let it marinate for a couple days in a Foodsaver vacuum-seal canister. The marinade consisted of soy sauce, sugar, garlic, scallions, and sesame oil. I cooked it on my beloved old stainless steel Performer, using Coshell coconut charcoal. Cooked indirect until about 115°F internal temperature, then reverse seared directly over the coals. I couldn't tell if the vacuum sealing made any difference in taste, but it certainly didn't hurt. Thanks for stopping by to check out the photos!

The beef in the vacuum canister, along with some shots of the sirloin as it went on the grill.

Here's what it looked like right before I pulled it off the grill.

Some final carving photos and ready to serve.

Thanks for sharing! Liking the canister idea! How was that charcoal ? I'm gonna try to pick some up this weekend.
