Tonight's dinner... Spatchcocked Chicken with Butternut Squash...

This was supposed to be last night's dinner but I wasn't really feeling to good so I put it off til tonight... I brined this chicken for approx. 3 hours with crushed red pepper brine... I then rinsed and dried it before placing it in a big Ziploc with Michaels Portuguese marinade where it sat overnight in the fridge... Here she now lays on the grill indirect at 300 with a small chunk of hickory (I only like slightly smoked meats)... That's my general temp that I shoot for on my grill when indirect... Also, on the sides of her are some Butternut Squash with butter and brown sugar...


Here is as close to a plated pic as it's gonna get for me right now... We also had some Stove Top Stuffing to go with this as well... I hope you enjoy...

I never done a spatchcock chicken before. I need to try this method of cooking.
 
That's a nice lookin' chicken, Russ. Butternut squash, not my favorite winter squash: Delicatas, here we come!
 
Good morning... Thanks everyone... I think my next cook will be an indirect chuck roast... I'll have to figure out how I'm gonna do it... Probably slow and then foil with beef broth... Mushrooms and onions on the side with baked potato... Maybe inject it?

I cant decide which id want to dive into first , the chicken or the squash. that looks sublime. :cool:
