Weather has turned…..cold, blowy and snow………
Time to make soup…….
I am making my soup and the MRS is making her own batch…..let’s see how much we can get in each others way tomorrow!!!!!
I am making a batch of beef barley soup with my own smoked brisket and my own beef marrow broth for part of the liquid portion.
I found this pack with all the lentils and barley ready to go….they are good I have had them before….I am also using leeks.
I just tried leeks this week for the first time ever and I am in love with them…..never knew what to do with them so I just started using them and ate it 2 time this current week…….
Have to use some stock as the bone broth is insane rich.
MRS is making sweet potato, squash and leek soup.
Both should be good….final pics to come…..

Yup, it's soup season!! I've got a gallon of Turkey stock from Thursday's bird. Thinking either a Turkey/potato with some kielbasa in it, or a Turkey/wild rice. Love your beef barley with brisket idea, should be delish!
 
Good soup weather! You ever try vichyssoise? My Son makes it. Some like it cold I prefer warm.
I just set a gallon of turkey stock from two carcasses to cool off outside. Love this big outdoor refrigerator ( 22f outside)
Never tried it or heard of it but just read about it….sounds really good…..

Sounds like a plan!

No snow here yet but AMs are in the lower teens. Will be breaking down the turkey remains and boiling up the carcass tomorrow. Turkey Noodle and Turkey Tortilla soups coming up!
 
Soup is on!
First thing to consider…..how much storage space do I have….lol…
Both soup filled 13 separate containers……heavens….
The6 all came out awesome……the beef barely wasn’t traditional, as made from scratch with bones ect…..
But for what it is it came out really good, many would not be able to tell……
The sweet tater, squash and leek is nice and creamy with lots of flavour too!….
Hopefully I got you guys moving on some soups n stuff with all your thanksgiving carcasses…….

I'll be making turkey noodle soup with homemade egg noodles in the next day or two. I make it every year and look forward to it as much as eating the Thanksgiving turkey!
 
You're killing it, Darryl!! They both look excellent, but that beef barley is dynamite.

We love soup around here. My wife loves carrot-ginger; I'm a big potato-leek guy. Or pozole. Or broccoli-cheddar.

Soup season is the 💣. Yours look amazing. You got me revved up to do that beef barley.

I’ve not made soup this week, breast “carcass” is still in the fridge, maybe tomorrow, wife is not a big fan.
Now vichyoisse is a different story, something from very little, a wonderful soup! Warm in winter, chilled in summer, very satisfying! Crazy simple!
Sweat cleaned sliced leeks in butter. Add water or stock and add diced russet potatoes (1” dice) simmer until the potatoes are quite tender. Blitz with an immersion blender (or process in a blender or food processor in batches) adjust seasoning, I like to garnish with snipped chives enrich with a pour of cream sour cream, crème fraiche, or, not! Lovely super cheap delicate soup and bread dinner! I have a leek out there, maybe for tomorrow at lunch!

Awesome cook! Been doing a lot of crockpot cooks, and I'm thinking some split pea soup is in the very near future. thanks for the inspiration Darryl

There was an Emeril episode with Julia Child where she is showing him how to make it and he starts jabbering about adding some of his seasoning. She pretty gives him “The Look” and says “Well, of course YOU would but WE are not going to.”
Tim, it’s such a basic simple soup I generally split the leek lengthwise and crosscut the halves in 1/4” slices and run them under water or let them “swim” in a bowl of water and drain the dirt off. It’s well worth the experiment, keep it as simple and use the best looking leeks you can find, not too much of the green (that will “spoil the color” as J.C.would say) I use the light part and not worry too much about how green it gets.
