We love tomato pie. the easiest way to screw one up is use juicy tomatoes.
Some recipes suggest slicing and paper toweling the fruit. This helps.
I think I have a better idea. Roast those tomatoes. All it should do is concentrate the flavor and end the soggy pie crust blues.
Since I'm not the pie crust maker...I haven't tried my brilliant idea.
Anybody do this ?
