Today is my first smoke on my new 18" WSM

Got my WSM yesterday, just put some wings on. My goal is to smoke them around 250-275 then try and bring them up hotter to crisp them up towards the end. Will use my gas grill as backup if I need to. Using 3 small fist size chunks of apple wood.

I have been documenting the whole thing, so finished pics will definitely be coming. I can't get it to go above 230 so I probably didn't use enough hot coals to start or didn't let them get hot enough in the chimney. I used about 2/3 of a chimney full on top of probably half to 2/3 of the charcoal basket filled. the lid says about 260 while the grate temp (from my smoke) says 229. Plenty to cook but will most defnitely need my gas grill to finish them off.

Edit: Of Course now that I said that its creeping up haha.
 
So they came out good. A little rubbery on the skin and probably too much smoke but definitely a success. I don't think my grate probe placement was good i need to find a better spot for that next time, I think it was hotter than it was reading cause of where it was.

Can't wait to do it again.

One of my favorite tricks is to take the WSM apart and put the grate right over top charcoal to get that char/ reverse sear for a few minutes at the end of the cook.
 
Did they taste smokey? How long did you smoke it for?

Smoked them for about 1-1.5 hours. I think it stopped producing smoke about 15min before I took them off. I only used three smaller chunks. Definitely smokey, my wife thought too much, I thought they were great. I should have grilled them longer after to get bettter skin. Next time I'll probably just char them over the coals like suggested above.
 
Thanks. I haven't done wings yet, and I've been meaning to try this recipe below, so I'll do both and make this recipe, smoking it on the WSM like you've done.

It was super easy, I set an hour timer a little after I put them on and just temped them. They were all like 165-175 when I pulled them then just charred them on the grill.
