We did a tri tip tonight and to be honest it's the best I ever had. This was no joke!!

The tri tip was injected with beef broth,cumin ,onion,garlic,cayannne. Then seasoned with chef merito. I let it get happy for 5 hours.


Then got my potatoe packet ready with onions and jalapeños. Seasoned with black pepper and garlic salt. Threw in a few butter slices.


Here it's on the smoker @275 with my potatoe pack on the bottom of the wsm.


Used some oak barrel pieces that a friend gave me. The smell was great!

Once it hit 120 I removed it.


Took the mid section of the wsm and did a direct sear

Rested for 10 min then sliced


Plated and ready to eat.


Tri tip was full of flavor and moist-juicy. Great smoke flavor as well.

Gorgeous TT Tony, cooked the way i like it. Nice job with the WSM. A lot of Guy's forget you can pull that middle section and get a nice sear. Well done Bud!
 
Looks great Tony! Tri-Tip is like brisket when u hit it u hit it!! Trust me u nailed it! Potatoes look great also, how did u cook them?

I put them on the lower grate at the beginning of the cook. Chopped up 5 potatoes and 3 jalapeño and a couple go Mexican onions. Drizzled a little oil and seasoned with garli salt and black pepper. Add a few sliced pieces of butter. Took about 40 min or so. You can see my packet on the lower grate.
 
Dinner looks like it was delicious. I have cooked many things on the grill but have yet to do TT, your cook makes me want to grill one!

When I saw the title of your post, I knew that this cook had to be something special if you managed to impress yourself after all the great meals you & Maribel have created. You did not disappoint, Sir!!! Excellent post & great use of the WSM for the low & slow, as well as the sear!

Excellent tri-tip Tony. It's one of my favorite cuts. Fairly lean but just enough fat for great flavor. Great sear video also. ;)

Beautiful man! I gotta get me some tri tip. I also need to follow your lead on jalapenos again....Potatoes, onions, and japs. Very nice.
