Thighs & Tri's

cleaned out the fridge door shelves and mixed up a marinade for some bird thighs

a little bit of everything.... tossed the thighs in a large zip close bag

in the fridge for something else, and came across these bottles... so I added them to the mix as well

Now we're ready to soak it up....

the next day, the thighs were removed from the bag and on the hot grate of the 26" OTG

funky lookin' brown... do have apple wood in the fire for smoke...

when they were cooked thru,

I slapped on some Rufus Teague's Touch 'O Heat sauce

then served them with steamed asparagus

those were daggum tasty chicken parts!
the next day, we found fresh tri tip locally YaY!

seasoned the beef with a Santa Maria style rub
1 T Kosher salt
1 T finely ground black pepper
1 T garlic powder
1 T onion powder
1 t cayenne

opened a bottle of California Raymond red wine...

fired up a Weber 26"OTG again...

seared the tri for a few minutes then indirect to a decent internal temp

added mushrooms to the grill also....

soon, it was sliced, served and devoured!

big ol' bacon beans and baked taters played a role

have a few more in the freezer, just thinking about um is getting me hungry again:)

Really diggin' the color on those thighs. They look great on the plate with the steamed 'gus.

The tri tip sammies and bean covered spuds look darn tasty, Jim! Two more great cooks coming out of the P1GVILION!

Both meals look delicious! Since I can't find the tri-tip here, I have been watching videos on how to butcher a sirloin butt. It appears that you can get it from that cut.
 
Pretty bad when you have to stand in line to give compliments. Absolutely nailed both meals Jim. Great cooks Jim.
