our family has a candy shop that's fired up from thanksgiving through Christmas, then Valentines day, Easter, Mothers Day, etc.

My grandpa moved to the states from Germany, he was a chocolatier there, & he imported it for a while but there were quality issues on the boats. He & my grandma built a big candy shop in the middle of their apartment complex (etc - also had storage units & a diesel truck repair shop). The shop used to be the place to be............I remember all the aunts & my grandma hand dipping the chocolates,,,,my cousins working there during the christmas break. The old man (grandpa) died young, around 65 years ago. He passed it on to his kids, who passed it on to their kids (my cousins).

Lots of injuries going around, & I offered assistance (my cousin who tore his bicep tendon from the bone). His older brother called on me when I was picking up an order for some customers today, and for the first time I helped with pecan rolls today. I've been called before they start batches to make sure they have help dumping these big batches of creams, caramels, fondants, etc.

They're giving me an extra good price (I buy a lot), and it's fun so wth :)

None too impressive, & the shop (moved ~20 years ago) is a shadow of its former self. There used to be room for 8 dippers, now only 3, the kitchen is about halved. I'll try to get some that make it look better than this :)

These are both my cousins:

She's dipping chocolate creams or chocolate mints, the picture last night shows the older brother who learned from my dad & his brothers-----his cherry creams are the best I ever remember (cherry creams with chunks of maraschino cherries in them)

This one here, we hang out fairly often, he's the one who detached his left bicep tendon. I was helping him strip this table of caramel when I got this pic. His cast was just taken off, & he was strapping into a ~90 degree brace when not working.

Very interesting Clint. Thanks for sharing. The family is fortunate to have your support. I used to love to watch the candy makers do their thing with the fudge every year at the county fair.
 
Dude! I just put on five pounds looking at the pictures. Great that you can help out, I'm sure its very much appreciated. Thanks for sharing.
 
I just ate a few spoonfuls of caramel leftover from the pecan logs (notice I didn't say rolls). After it reached a certain temperature it stopped sticking to the centers and there was about a gallon left over. My cousin stirred in some more cream or condensed milk (probably condensed milk, it was in a can----the caramel was made with 1/2 gallon containers of heavy cream,,,,3 gallons iirc.) and turned it into a sauce & put it in 2 half-gallon containers..... one for me. I promptly gave most of it away! saved ~12 oz for me.
 
Clint, has your family ever tried to make something like the DeSmets Turtles before? They are addicting.
 
Here's a short clip of my cousin dipping some chocolate hearts---it's a chocolate cream or fudge with ?walnuts in it. The shapes are how the flavors are known.

Clint, that is just amazing and how wonderful that you all can get together and enjoy time like this. It all looks soooooo GOOD and I can feel the pounds already just looking at all of it. Wishing all of you a very Merry Christmas and Happy New Year Clint.
