The big day...

Well tomorrow is the first big smoke. Got a Boston butt, rack of spare ribs, and some ABT (Anaheim Buffalo turds). Got the smallest butt the store had weighing in at a petite 8.7 lbs. Any advice or words of encouragement are welcome.

Start early and put the butt on the lower rack. Use the upper rack for the ribs.
Remember - lookin' aint' cooking, so don't lift the lid unless you have to.
Have fun and enjoy the eating the aftermath. :)

Hope your alarm went off and all is well. You've already started, but both would fit on the top rack if it was my 18; ribs either cut in half in a small rib rack or rolled and skewered. ABT's on the top rack if the butt was done early, or bottom rack if not. Anyhow, I hope your 'q turns out to your liking and you enjoy your day cooking! :-)

Thanks Dave. Everything is coming right along. Haven't rolled ribs yet. Does that require any special attention to be paid to the ribs?

From what I could tell from your pics, it looks like you didn't need any help at all! As far as rolling ribs though, I'm sure everyone has their own technique. For one thing, full spares don't roll so well. Anyhow, you just use a skewer to hold the ribs coiled, and it's very easy to turn them halfway through the cook for even cooking. Congrats on the cook.

Well it was the first big cook on the wsm. This is my fourth year smoking. Started with a cheap chargrill with a side box. That thing stopped me from charcoal for two years. Had an electric until the element shorted. I can tell y'all I wish I would have manned up at first and got a weber. That would have saved 4 years of ehh BBQ. This thing is a breeze. Cant believe how easy it is to dail in.

Everything turned out pretty much like I wanted except the ribs. Today was my first time with full spares. Had a decent flavor, ribs were a little overdone by the time the top got right. Oh well live and learn next time I'll split the rack.
