Thanksgiving.........PSB

So, the tradition for the whole CEO side of the family is her doing Thanksgiving, they come from far and wide and it is the meal of the year without a doubt. 25 people today and it was incredible.
I usually make some additional dish to add to it and most often it is Venison roasts. But the request was in from all, my version of PSB.

So started with two five pound Chuck Roasts, injected last night with Worcestershire and beef broth. This morning kosher and fresh ground and ready to go

Smoked roasts on the WSM until internal of 155 then laid in this bed of heaven, onions peppers, Guiness Stout and a little crushed red pepper

Had 30 mph gusts all morning, custom wind break

Done and fork tender at 208 internal

Sliced and ready for the table after a 15 minute rest. Juicy as meat gets, it was fabulous

Great looking PSB bill and the Turkey looks good also. I'm lucky that I live in a part of Oregon that hardly get's any wind, it get cold with a little snow and lots of rain to come but no wind. It looks like the Schultz ate well on Thanksgiving.
 
Bill, I can tell that your family and guests were in for a real treat this year with that PSB and giant roast turkey.
