So while breaking down a pork shoulder the other day (thank you j biesinger) I had this dish in mind for the "money muscle"
Since El Preggo (or La Pregga if you want to get technical) has a problem with strong scents in the house, itlooks like I have to take the Thai basil, chiles and garlic to the Kettle!
I saw this trick to get the coals closer to your grill surface
First get the broccoli cooked up for a few minutes
I forgot to take a shot of the pork with garlic searing up because its so fast paced. You just give it a quick sear to knock the pink off. Once it turns white pull it.
Then equal parts of fish sauce and soy sauce then the sugar, Thai basil and Thai chiles
Once that cooks for a few minutes, everybody back in the pool to simmer for about a half hour stirring a few times
And finished. Served over some jasmine rice.
What a unique and fragrant flavor the Thai basil brings to this dish. I have been making it for years, but this was a first on the kettle.
