Ingredients​

  • 1 lb ground beef or ground sausage
  • 2 packs (8 oz each) cream cheese, softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Pepper Jack cheese
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
  • 1/2 cup diced green onions
  • 1/2 cup diced jalapeños (optional, for extra heat)
  • 1 packet taco seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • Tortilla chips or crackers for dipping

Instructions​

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Cook the Meat: In a skillet over medium heat, cook the ground beef or sausage until fully browned. Drain any excess fat.
  • Mix the Dip: In a large bowl, combine the cream cheese, sour cream, and mayonnaise. Mix until smooth.
  • Add the Ingredients: Stir in the shredded cheddar cheese, Pepper Jack cheese, Rotel, green onions, and jalapeños (if using).
  • Season: Sprinkle in the taco seasoning, smoked paprika, salt, and pepper. Mix everything together until well combined.
  • Add the Meat: Fold in the cooked ground beef or sausage until fully incorporated.
  • Bake: Spread the mixture evenly into a 9×13-inch baking dish. Bake for 25-30 minutes, or until the top is bubbly and golden.
  • Serve: Serve warm with tortilla chips, crackers, or veggie sticks for dipping. Enjoy!

Going to do this on the smoker for X-mas or New years eve.
 
Just made this appetizer last night for a party, came out Great!! Honestly better than expected. Thanks for posting, came in handy with 2hr notice lol.

This will be my go to dip going forth. Its basically a baked queso dip.

-I made 1.5x recipe (perfect for 14 adults)
-I used 1lb ground beef, 0.5lb mild Italian sausage
-added additional green onions on top to garnish.

For those not wanting to use a packet of taco seasoning, here is our old taco seasoning recipe. Been using this since 1974.

Chili Powder 13 tsp.
Cumin 6 3/4 tsp.
Black Pepper 5 tsp.
Accent 2 1/2 tsp.
Salt 3 1/2 tsp.
Garlic Powder 2 tsp.

For every pound of ground meat, use 8 oz. can of Tomato Sauce and 6 tsp. of spice blend.

Add chopped onions to meat and brown.

Drain grease from meat before adding sauce.
