Temp surges

Why does a smoking session always have a time when the temp surges up?
Nothing changed on the vents but it jumps
From 225 to 250
Is it a wood chunk catching?
Any ideas?

What are you smoking on ?

smoking temps are rock solid stable on my WSK and on my BGE. I don't recall seeing spikes when I had a WSM.

I've only had that happen when a chunk catches mid-cook.

I bury smaller wood chunks down in the charcoal so I haven’t seen this to a large degree.

I have not seen this happen on my WSK. my primary temp control is the amount of intake air, and if I start with a small fire, it stays small.

Going from shade to full sun.
The meat is warming up vs dealing with a cold mass.
25 deg is no biggie up or down.

I always worry more about a drop in temp more than jump up. But 25 degrees is not a huge concern, especially when you were only at 225 to start.
