Tatonka Dust Seasoned Tri Tip

I was lucky enough to score a sample of Tatonka Dust and gave it a try on a tri tip. Took the tri tip out of the fridge almost 2 hours before it went on the grill and seasoned it with the Tatonka dust. It really turned the roast dark. Just before I put it on the grill I hit the roast with some more seasoning.

On the grill with a chunk of red oak for smoke and cooked to an internal of 125*F

Lets eat!!! The Tatonka dust was really good and a very nice change from my usual Santa Maria sort of seasoning. Looking forward to trying it on a couple of steaks!!

As to questions on the Tatonka Dust, it is a seasoning my wife makes and about 9 months ago we started working on making it available for retail... My wife and I each have full time jobs and this has been an educational learning experience for each of us, we are hoping it will be ready later this month. The taste is difficult for me to describe besides saying it is quite unique... there are testimonials on our website that John posted that should give you a better idea about the seasonings flavor rather than me trying to describe it. We also have a Facebook page for the seasoning that people can follow if they are interested in knowing when we have it in stock and available.

What's the taste difference between Tatonka and your "usual Santa Maria sort of seasoning"?
wondering what the ingredient is that darkens the meat....
 
Looks great John! I'd like to hear more about the seasoning vs. Santa Maria, too. Your TT looks like a brisket, which isn't a bad thing.
 
The Tatonka dust is different alright but in a good way. It is very unique, I have never tasted a rub quite like it. When I opened the package and tasted it the only thing I could think of that tasted similar was Alegro marinade and I haven't used that in a couple of years.
