Very nice, they look great!!! There is an Irish Pub down the street from me that makes Corned Beef Tacos. People rave about them, I have never even been in the place though.

I do similar but make egg rolls instead of tacos and dip in doctored up 1000 island.

Great looking tacos Nate - we have been getting some pretty good Irish Fusion type dishes going here the past coupe of days and this is certainly a good example. One question though - what is leftover corned beef?
