Tacos Galore!

Brined a halved chicken last week with salt, light brown sugar, peppercorns, and thyme. Planned on eating it that night but life happened. Put it in fridge and pulled it for tacos/quesadillas ect...

Decided the chicken would be best for tacos. Did homemade salsa with cubanelle peppers (store was out of poblanos), tomatillos, green onion, garlic and cilantro.

Did Chicken taco "salads" as we call them. Bed of tostitos, lettuce, cheese, fresh salsa, some hot sauce and sour cream.

Fish the next night. Tilapia coated with homemade blackening seasoning. Paprika, garlic salt, pepper, Old Bay, oregano, and thyme.

Seasoning was solid replacement since we were out of our usual "Black Magic"

Ate our fish "tacos" 3 different ways.

I had traditional, and boy were they good!

And my son tipped his hat to the grillmaster. He had his straight up and ate every single bite! I was surprised because theres a bit of spice there for a 2 year old, but he gobbled it up.
