Sweet and Spicy Babyback Ribs

I picked up 2 racks of babyback ribs the other day. Last night I seasoned both of them, after
removing the membrane and trimming some excess fat, with seasoning salt and garlic pepper.
One rack was then seasoned with Tatonka Dust and the other with Simply Marvelous Sweet
Seduction, which is my wife’s favorite rub on ribs. Both refrigerated in plastic wrap until today.


Out of the refrigerator and given another coating of seasoning.


I preheated the WSM to 225 degrees. I am using KBB and pecan splits with this cook.


2 hours and 15 minutes later I pulled both racks to wrap them.


The Sweet Seduction rack was coated with Parkay, brown sugar and honey.


The Tatonka Dust rack was coated with Parkay, Vidalia Onion Slow Burn Hot Sauce and Smokin’
Guns Gunpowder.


Both are back in the WSM.


Out of the wrap after 1 hour and 20 minutes both basted with the juices from the wrap.


Ribs are done!

Both racks came out delicious! The Tatonka Dust rack was an experiment for me as I wondered
how it would work on ribs. Tatonka Dust works great on everything as far as I’m concerned. I will
be doing this again. The Vidalia sauce and Gunpowder game it a nice spicy bite. I think my wife
actually ate more of these then her normal sweet ribs which to me attests to the powerful flavor
of Tatonka Dust.
