Tuesday I played hooky from work and went Tuna Fishing. Ended up with 6 nice Albacore tuna. The bulk we will can so I vac packed it and put it in the freezer until we can get to it. I saved one loin for grilling!

Mighty fine Sunrise on the Pacific!

On to the cook. I picked up a London Broil and Marinated it in Bernsteins Italian Dressing.

Fired up the Mini-WSM to 180° with cherry and apple wood. Smoked the steak until it hit an IT of 110°. Pulled it and let it rest while the tuna cooked.

Slathered the tuna loin with garlic butter.

Steamed some fresh green beans
 
Once the tuna was done I removed the pot and cranked the heat up on the Smokey Joe to sear the steak

Looks like you had quite a day, Case. Everything looks great. I like how you cooked that tuna. I'm not a fan of eating it practically raw. TT looks great too. Thanks for sharing those fishing pic's.
 
Amazing looking fish. Steak looks spot on too.

Can't get much fresher than that unless you cooked it on the boat.

Thanks Cliff! We like our Albacore cooked. Ahi and the other tunas are fine seared.

Thank you! I've had my fair share of fish cooked right on the boat! When I commercial fished we ate good! Benefits of the job!

Thank you! Freezer gonna be empty as soon as we can all this! Good thing there's a half a pig coming!
