Super Bowl brisket smoke (pic heavy)

Decided to pick up a brisket at Costco last week, and smoke one for the game. First brisket on the WSM.

Started with a rub Saturday morning. Sat covered in the garage fridge until about 8pm. Started getting the smoker ready at about 9, meat on about 10pm. I let the temp stabilize, went to bed about midnight. Checked at 5am, needed more charcoal, was almost out and temp dropped to about 150. Got it back to about 230, let it go. Pulled it off about 2 hours ago at 195. It's sitting wrapped in foil, in a towel, resting in a cooler. Will post some sliced pics later.

Looks great, did the temperature drop hurt it any?

I think so, but not having run this smoker for that extended period of time, I'm not real sure. I think the wind helped burn through my 1st load of Kingsford more then the cold temps. I know last night I had all the vents all the way open and it held at 225-230. Once I reloaded, at 5am, I closed one bottom vent that was facing the wind, and it ran at 250ish until I pulled it off.

Sliced and plated

I just smoked ribs yesterday and it was kind of windy. As you noted the wind will eat through your charcoal or at least it did mine.

WOW great brisket TMueller. All kinds of great brisket cooked for Superbowl they are all over this site.
