Gorgeous day - sunny and warm. Perfect for some smoked goodness.

Got 2 full racks of St Louis ribs.

Post oak for smoke. A homemade concoction for the rub for sweet with heat.

3 1/2 hours on the smoker at 225, then 45 minutes wrapped, then slathered with some Sweet Baby Ray's sauce.

A family rated 9.0.

Was it competition grade? Well, it was very tender to be fall off the bone, but the flavor and smoke...oh - I'd take this all the time.

When the family rates those ribs a 9 you can keep the comp ribs I'll take the 9. Good looking ribs Erik and the weather was outstanding in Santee today also. Good luck and good cooking.

Great looking ribs Erik. If the family gives you a 9, then that is all that matters. Weather in the San Fernando Valley was very pleasant also, except for the high winds we have. Keep up those great cooks.

Nice looking ribs Erik, I'm sure that they got a well deserved 9. Lets see, here in the Arizona high country it was a balmy 21 at 8am and reached a blistering high of 42 at 3pm. To celebrate the outstanding weather we had leftover taco casserole with the fireplace going. But at least all of last weeks snow is gone:)

Great looking ribs Erik! They look like a solid 9 from here. How did you get away with 'polluting the atmosphere' with your BBQ smoke in the PRC?

Regards,

John
