Hi Folks

Its an extended holiday weekend over here in the Uk - and the weather has been great (at least in the South East)
Have my daughter home from university and all the family back together so we got a couple of nice thick (1.5") sirloins
Rubbed with Olive Oil, rosemary, bay, thyme and S&P they looked like this :-




Had them indirect on my OTP until they reached around 125f and then seared over that fantastic direct heat that only charcoal provides :-



served up with garlic & basil ciabatta, herb crusted tomatoes, mushrooms & onions and jacket potatoes (all cooked on the OTP) turned out like this :-



this last photo doesnt catch just how pink the steak still were - but does show just what a moist and tender steak the reverse sear delivers

I have a friend who is visiting relatives in Eastbourne. He said that the weather has been awesome.
