Hello All,

So I spent Independence Day running a food concession at the Slidell Heritage Festival as a fund raiser for the Slidell High School Marching Tigers. We cooked hamburgers and hot dogs for a crowd of around 4500 (I managed to sprain my knee and I still smell like grilled hamburger). It made for a long hard day. Saturday was spent cleaning and rehabilitating the equipment. On Saturday evening I was at the store with my daughter and she asked if we could have Teriyaki Pork Chops for dinner on Sunday. I said, "Oh Baby... Daddy thinks that... is a great idea!". So I bought some chops and the stuff for Teriyaki marinade and off we went...

This turned out to be a great meal. The family really enjoyed it. I made the garlic vinaigrette based on an idea I captured from Food TV (I didn't catch the name of the chef). It uses a sous vide method to infuse garlic flavor into the oil used for the dressing (plus you wind up using the sous vide garlic in the dish). I will post that later in the week because it is really good. I marinated the vegetables in the dressing and then served it on the side as a sauce. I already knew the Teriyaki would be a slam dunk because... hey - home made Teriyaki. Any way I was glad to be able to spend some time cooking for my family. Life is good. Thanks for looking...

Great looking chops and sides John and all done on the grill!!!! Burger and dogs for 4500 people, that a lot of cooking!! Any idea how many pounds of each you guys cooked?

That was an exaggeration on my part - the estimated crowd was 4500. There were a number of other food vendors at the festival site as well. All in all we sold around 800 units which means that about 3700 missed out on my cooking...

Great cook, looks like you have some great help. You got a weenie dog! We got one when we got married and she lived just a couple months shy of 25 years. Awsum dog, go anywhere do anything, never a headache (unless she headbutt you which she seemed to like to do)

Chuck - Coco is my Mom's dog. She is the only dog my Mom has ever had that I can stand (the rest of them were neurotic Llasas Apsos and Shih Tzus). Actually Dachshunds were bred for badger hunting. Any critter her size willing to go down a badger hole, kick his butt, and drag him out is worthy of respect in my book...

Wow sir you did a lot of cooking and with a sprained knee that had to be tuff! Your home cook looks awesome also nice job!
