Sunday chicken

I have been cooking my chicken to 'safe' temperatures but I have not been satisfied with the meat texture or tenderness.
For this cook I am cooking until I am satisfied with the leg shake test.
This picture was taken when the thermometer hit 160.
Started leg shake at this temp and cooked until I was satisfied.
Probe measured 183 in the thigh.

Once my chickens come off the heat they kinda deflate and look scraggly.

My wife and her sister came back from a craft fair hungry.
She warmed up a French loaf and the destruction began.
I am a lot more satisfied with this chicken than I was with the first three I cooked.
I see some beautiful plates posted here...we are more like a pillaging horde.
