Thawed out a frozen chicken and put it in a brine for a couple hours. Gave it a coating of a mix of flour, garlic powder, onion powder, pepper and paprika.
Pretty sure my neighbors think I'm two fries short of a Happy Meal, when they see me heading out toward the garage with camera in hand.
On to the mini smoker.
Getting close.
In to the house and put it under the broiler for a short while to crisp up the skin.
Plated with some spanish rice and french cut green beans.
This was the best chicken I have ever cooked. My wife said the same. Tender and moist. Gonna be brining my chicken from now on.
