Good Sunday evening folks! Been working up a brisket all day!! Been quite a while since I have made one and since the last one was well..not quite what I was wanting we though we'd give it a shot!
Started with 8 lbs of beef, trimmed and ready for rub! Pretty much used the bragging rights brisket recipe in the "smoke and spice" book! Basically the only variations were that I used brown sugar instead of reg sugar in the rub, bit higher heat"240 to 275" yep pretty much it!
Rubbed down And in the fridge the nite before then off to the races "early show"
Still dark when we fired up the 18 ...
And then "here comes morning"
Ya it was about 42 and we had fresh snow up high!!
Went inside and had a few of these!
My football viewing room has turned into a "Legos sanctuary"
Ok so this about 2 hours in..
Then after a mop at 3 hours
Beans getting down in the basement!
Bout ready to come out!
She sliced up real nice!
And served with beans and tater salad.. Bit of #5 sauce an a blue moon pumpkin ale!
Actually was really tasty! Bout 6 hours in at 260ish I foiled to get over the hump! Went for about 8 hours, over hickory! Not a great smoke ring but had great flavor!
