Stuffed pork tenderloin, grilled potato chips and zucchini
Last night we decided to stuff a small tenderloin with some prosciutto, spinach, kalmata olives, and mozzarella. Overall was really good! We seasoned the pork only a tiny bit on the outside with a little Mrs. Dash, but nothing else. It ended up being really good, the stuffing added plenty of flavor. The way we did the stuffing was to cut it down into thirds (all attached) then flattened it a little with a mallet. The potatoes we did were based on our favorite roasted potatoes which we usually just do cubed/small wedges of red potatoes with EVOO, dijon, pepper, rosemary, and thyme. This time we just sliced them thin and grilled them on the side.

All in all really really good. Not really all that bad for you either! Would definitely recommend it.
