Stuffed Peppers

My neighbor dropped off a flat full of veggies from his garden. Decided I would try some stuffed peppers on the grill. Here are some pics of the cook.

Here is the flat of veggies.

Had to make sure the peppers would fit in the pan.

Stuffed the peppers with a meat, rice and spice mix.

Filled the peppers and pan with some tomato juice.

On the WSM with no water pan, and an upside down pizza pan under the pepper pan to keep the bottom from getting too hot.

Threw a little cheese on top but it didn't want to melt too well. :(

Sorry, no plated pics, but they were good. The only issue I had, besides the non-melting cheese, was the rice could have been cooked more. Next time I will use parboiled rice.

They made for some darn good leftovers as well.

What a great idea. Ed if you don't mind me asking, how hot and how long? Excellent!

Rolf, I just let the vents stay wide open the whole cook. I'd say it was running about 325 or more once it got fully going. Started with a minion set up. Took about 2 hours as the meat and juice were cold and it took some time for the smoker to get up to temp.
