do many of you guys actually use the wsm to cook dinner after work? by the time i get out of work, gym, cook dinner - its already 8:30 and thats on either the grill or the stove. cant even imagine using the wsm for dinner. wsm cooks have been more a weekend thing for me so far...

How about firing it up before work and dinner's ready when you get home? I've never done this, but thought about it. It's not much different from an overnight cook. Personally, my (probably irrational) fear is I'll come home to a big pile of ashes where my house used to be. Maybe when I get an ATC.
 
I have used my WSM or mini for " fast" cooks. Chicken or pork loin. 2 hour cooks max. I don't go to the gym :( so I have a little extra time than you. But most of the times I cook plenty of smoked food on weekends and vacum seal for use during the week.
 
Chicken just spit a whole chicken and cook between 275 -300 range with dry rub is another good one, and I am with Tony about he gym thing. Need to start though.

Tony, I am retired but that is my strategy most times when I use my smokers. Do enough for many meals, vacuum pack them and fill the freezer. Then it is just a matter of minutes to pull something from the freezer, heat and serve. It is totally practical and the quality is above criticism, too.

Take the water bowl out and cook some wings on the top grate of your WSM. Cook up real nice without any flare ups right over the coals. Only takes about an hour or so.
