St Louis Ribs with Smoked Mac n Cheese

1 slab of St Louis cut ribs were marinated overnight in a mixture of apple juice, white vinegar,
sugar and kosher salt. Ribs were dusted with a homemade BBQ rub and are coming up to room
temperature.


Put onto the WSM using KBB, with a few chunks of hickory and apple. I am also using a full pan
of water in today’s cook. I am going to try something a little different today with the ribs, thus
the ribs on a rack in the aluminum pan.


3 hours in and the ribs are ready to be covered.


Put in another aluminum pan with 1 cup of apple juice.


Put back onto the WSM.


1 hour covered and the ribs are ready to glaze. Glazed with Lambert’s Sweet Sauce O’Mine.


Put the Mac N Cheese on the smoker and pulled the ribs.



Mac N Cheese is done!

The mac n cheese was really delicious as always. The ribs were just okay. I know I won’t be
marinating them with the mixture I used again. Too much of a vinegary taste for me. I am not sure
yet whether I will cook them in an aluminum pan again. They cooked all right but I think the pan
deterred some of the smoke flavor I was looking for. Oh well, live and learn. It was edible!

Mike it looks awesome although I have not had much luck cooking things in any type of vessel on the smoker...I come up with the same results!

Mind sharing the Mac and cheese recipe? I've been on the lookout for a good one...have not had much luck!

Ribs and Mac and cheese look good. Sorry to hear that the vinegary taste was too much.

I've been meaning to that mac n cheese since the first time I saw you cook it, I have it saved in my favorites, so one of these days
 
Looks delicious Mike and cooked well. Experimenting with flavors is what it is all about after you master temp control. You did good my friend

Darn good looking meal. I have often wondered if cooking in a pan like this would reduce the smoke flavor, some guys say yes and some say no.

That looks like a great meal. Sorry the results were not what you were looking for. I will have to try that recipe for Mac and Cheese some day. Thanks for leaving the link. It was just a simple cheeseburger today with munster and pepper jack with a slice of beefsteak tomato. Also threw a couple of pork chops nothing fancy for tomorrow's dinner for my 12 hour work day. I was just too lazy today to get anything going.
